Yeah, the math was one problem, but a bigger problem was that the pork I can buy here is far too lean, as is the beef. I got a bunch of pork fat and added that, but the outcome was still too lean. Lean chorizo ain't real chorizo. I mean, it's just not on!

Locally, I suggest trying the hot sausage from Johnston’s Meat Market in Monticello. It’s excellent and memorable. A Murdock family favorite!
